Dinner and Dessert!!!


Yes, Dogpawfile has everything a dog could want…even dinner and dessert! Ruby’s Mom shares with us her recipe for doggy meatloaf! After your pup enjoys this meal, serve up some Twink’s cupcakes!

Ruby's Mommy serves doggy meatloaf in New Zealand!

Ruby says: “My mum makes the most yummy dog loaf and so here it is for my doggy pals!”

Ingredients for Ruby’s Meatloaf
1 cup wholemeal flour
2 litres water
2 cups brown rice
2 large potatoes
2 good sized cloves garlic
3/4 bunch silverbeet
1 cup wholemeal or soy or vegetable pasta (macaroni or small shapes) 2 cups rolled oats
1/2 kg minced beef (fish or liver can be used)
3 eggs
good handful fresh herbs (chives, parsley)
2 large carrots
1/2 kg pumpkin
1 large onion

Coarsely chop veggies into chunks leaving skin on. While chopping veggies, boil rice in water 10-15 mins. Add veggies and pasta to rice, and cook a further 10 mins. Turn off heat, and leave to cool a little.

Add minced beef, eggs, chopped herbs, rolled oats and flour, and mix all together. Add more oats or flour if mixture is too wet – should be like fruit cake.

Spoon onto oiled and floured loaf tins, and bake in hot oven (180C) for 45-60 mins. Makes three loaves. Can be wrapped in foil and frozen. My Mum uses the silicone bakeware loaf pan. No need to grease pan and loaves come out keeping their shape (also pans are easy to clean).

For me she divides the loaf into three and freezes them. She makes the mixture up using a large preserving pan and usually cooks up another batch the same day and they last for a few months. I have a portion of loaf (about 1/2 cup)with my biscuits every morning and I just luuuuuv it!! (My mum tells me I have the shiniest coat in Gisborne (that’s where I live), and she puts that down to this loaf!!

Twinkle’s Pupcakes
INGREDIENTS
1 egg
1/4 cup peanut butter
1/4 cup cooking oil
1 teaspoon vanilla extract
1/3 cup honey (optional)
1 cup shredded carrots
1 cup whole wheat or white flour
1 teaspoon baking soda

1.Preheat oven to 350 degrees F (175 degrees C).

2.Combine the egg, peanut butter, oil, vanilla, and honey, if desired, in a large bowl; blend well. Stir in the carrots and mix thoroughly. Sift together the flour and baking soda and fold into the carrot mixture. Spoon cake batter into prepared muffin pan ~I use the foil baking cups for cupcakes.

3.Bake in preheated oven for 20 to 25 minutes. Cool on wire rack.

4.Make frosting out of peanut butter and honey ~spread on lightly.
 
These freeze nicely. Freeze first in a single layer, then place them in a ziplock bag ~this way the icing doesn’t stick.

    Yum, yum, yum!!! They both sound delicious!! Our Mom is a little confused by some of the ingredients in Ruby’s recipe…must be the difference in our locales! Worth a try with a few adjustments!! We can only hope!
