Miley’s Miami Fish Dinner

 

 

1 ½ pounds boneless cod fish (make sure to remove ALL tiny little bones)

1 cup milk

1 cup water

1 cup organic brown rice

½ cup organic green bell pepper, TINY DICE

½ cup tiny fresh frozen peas…or you can also use organic fresh peas

2 organic carrots, TINY DICE

1 Tablespoon olive oil

1 Tablespoon butter

¼ teaspoon salt

1 Tablespoon organic honey

1 teaspoon dried parsley or 1 Tablespoon fresh parsley

 

  1. Place the cod fish into a large saucepan with the milk and water and simmer over medium-low heat for 20-30 minutes. Flake it all apart while still in the pan…until it is all in shreds. It is fine to have some liquid still remaining, the rice will absorb this….DON”T drain it off, there are lots of vitamins in it!!!
  2. Cook the rice in another pan according to the package directions.

  3. In a small saucepan, saute the bell pepper, carrots and peas in the olive oil and butter. When they are semi-soft, drizzle the honey over the vegetables and saute for a few more minutes. Sprinkle with salt. Add parsley.

  4. Add the rice to the vegetable mixture, then mix all of that into the shredded fish. Simmer all of this mixture together for about 5 minutes.

  5. Place a small amount of kibble in your doggie’s bowl and add a topping of the fish mixture…mix together and watch her/his face light up!

  6. Store leftovers in small freezer bags…no more than 2 days serving in each bag to ensure freshness of the meal. Place in freezer and remove when needed.
